Fortune Cookies
You will need:
1 egg 1/3 c. sugar 1/3 c. all-purpose flour 3 tpsp. vegetable oil (canola oil is okay too) 2 tbsp. water 1/2 tsp. vanilla Small plate A muffin pan A waffle iron (or skillet and stove) Spatula Spoon Mixer or whisk Glass or mug (Optional) Fortunes to go inside the cookies |
Turn on your waffle iron if you are using one. Make sure to spray it with some cooking spray! Beat (or whisk) the egg until foamy. Then beat in sugar until light and fluffy. add in flour, oil, water and vanilla. Mix until smooth. Take a spoon (like the kind you would use to eat cereal) and spoon out 1 spoon full of the batter on to the waffle iron (or skillet; heat the skillet up a bit before putting the batter on it) and spread it around into a circle about 3 1/2 inches across using the back of the spoon. Make sure it is spread very thin! Cook until light brown on both sides. Okay, here is the part that you have to do really fast: Using the spatula, flip the cookie onto a plate. fold it in half (put the fortune in the center of the cookie before you fold it) then fold the bottom of the cookie over the top of the glass until it looks like a fortune cookie ought to. Put the mostly finished cookie in the muffin pan and wait until it dries. Eat and enjoy!

Supernatural Brownies
ingredients: 2 sticks unsalted butter 8 ounces bitersweet or semisweet chocolate 4 large egg 1/2 teaspoon salt 1 cup granulated sugar 1 cup firmly packed brown sugar 2 teaspoons vanilla 1 cup all-purpose flour |
1. Set a rack in the middle of the oven and preheat to 350. Butter a 13 x 9 pan and line it with buttered parchment paper or foil. 2. Bring a saucepan of water to a boil and turn off the heat. Combine butter and chocolate in a heatproof bowl and set over pan of water. Stir occasionally until melted. 3. Whisk eggs together in a large bowl, then whisk in salt, sugars and vanilla. Stir in chocolate and butter, then fold in flour. 4. Pour batter in prepared pan and spread evenly. Bake for 45 minutes or until top has formed a shiny crust and the batter is moderately firm. Cool in pan on a rack. Wait until completely cool to unmold brownies and cut into 2-inch squares. |
Chocolate Fudge Cookies
Ingredients:
2 cups all-purpose flour 2 teaspoons baking powder 5 ounces unsweetened chocolate 8 tablespoons (1 stick) unsalted butter 4 large eggs Pinch salt 1 cup firmly packed dark brown sugar 1 cup granulated sugar 1 teaspoon vanilla extract 1 teaspoon almond extract Confectioner’s sugar |
Put chocolate and butter in a bowl. Microwave until
Melted together (stir often or the chocolate will burn) Mix together eggs with salt, the mix in both sugars. Mix in chocolate mixture, then vanilla and almond extract. Add flour. Preheat oven to 350 degrees. Spoon out about 2-teaspoon balls Into the confectioner’s sugar (they don’t have to be too neat) and Roll them around. Arrange balls onto a greased pan (it does not have to be greased if it is non-stick) and bake for 12 minutes. Let cookies cool before removing from rack.
